Winemaker Notes: CONFIDENCE 2009

12% Alc
Crus: 'Hautes Mottes' Mesnil sur Oger.
Vinification: In 300 L barrels.
Aging: More than five years in our cellars
Dosage: No dosage

A myriad of very fine bubbles feeds a perfect foam bead. The yellow - green dress is very elegant. The visual presentation is classic and distinguished at the same time.

The first nose is very expressive and very fresh. Lemongrass, candied lemon, bergamot, ginger, are accompanied by a note of waffle dough (for aging in the cellar) and vanilla (for aging in oak pieces). We are at the very beginning in the balance between wine and wood, but very quickly the wine gives its full measure. When aired, it also offers scents of fresh hazelnut, jasmine and white fruit.

The attack on the palate is sharp, sharp and then the body of the wine expresses itself. We perceive, despite a particularly tense acid ridge, a beautiful volume of wine. The acid - sugar balance is very lively and energizes the tasting. The second part of the mouth is mineral and gently astringent (chalk and aging). As always with the “Confidence” cuvée, the mouth leaves a dense and tight imprint.

The finish is long, sharp and chalky, marked by a certain severity. It signs the style of the cuvée.

The “Confidence 2009” cuvée will not disappoint its fans, demanding and great lovers of Champagne wine. Uncompromising and still a teenager, she reveals herself in the line of her elders; pure style and a slender body. It also offers great conservation potential.
Reserve a well-shaped flute and a serving temperature of 10 to 12 ° C. Some very iodized seafood can accompany it with happiness (sea urchins, oysters in the open sea, abalone), think also of very noble fish such as sea bass or John Dory."

REVIEWS:

"Christophe Constant has brought this classy Mesnil producer back on to the scene after a few years of uninteresting efforts. No malolactic fermentation for the vintage wine, which comes from forty-year-old vines. Confidence is a very pure and young wine strongly influenced by minerals and with an intense village character. There is no element of flirtatiousness in it. Instead one can calmly lean back and await the effects of storage in the far distant future. (House) Upgraded to 4 stars." - Richard Juhlin, Champagne Guide

"Christophe Constant has put a highly personal stamp on this domaine, creating wines of intense expression and vivid personality. His champagnes are always racy and tense, characterized by their prominent malic acidities, yet they're rarely aggressive, achieving a carefully judged and finely tuned harmony. This is one of the top estates in the Cote des Blancs today." - Peter Liem, Champagneguide.net
