3828 bottles filled. Unfined and unfiltered.
Handpicked late March. 100% whole bunch. Cold soaked for about 3 days until wild yeast fermentation. Gently pigeaged and hand plunged. 6-10 days on skins and stalks. Basket pressed to seasoned French barriques for 6 months. Sporadic batonnage for the first 2 months.
Elevated demi-glace reduction notes refrain to bergamont infused black cherry, Dutch licorice and fennel frond.
The palate's entry has a ferrous, mineral like texture with a savoury butcher shop/gun flint element wrapped around a succulent blood plum core. Espresso bean, white pepper, florals and cordite poke their noses in too.
Long, lithe and tightly wound with a voluptuous lump of mid palate depth.
