Young third generation winemaker Vincent Couche produces Champagnes from Pinot Noir and Chardonnay grown with organic and biodynamic methods. Interestingly he has 3 hectares of Chardonnay in Montgueux on chalky soil and 10 hectares in Buxeuil in the Cotes des Bar primarily planted to Pinot Noir on clay, limestone and marble soil. He received Ecocert and Demeter certification in 2011. Truly passionate about the health of his vines, Vincent believes that great wine is made in the vineyards, and prefers as little intervention as possible in the winery. He uses innovative methods and is constantly testing the results, and has been participating in a scientific study on the use of "prot??odies" to fight mildew and Esca vine disease.
This blends 81% Pinot Noir from his vineyard in Buxeuil on clay, limestone, marble soil with 19% Chardonnay from a site in Montgueux with chalk soil. This makes for a terrific, and aptly named, Champagne that will have broad appeal. Scents of brioche, fresh herbs, orange and lemon rind, light caramel, brown butter, dried flowers and yellow spice lead into a plump, frothy mouthful of golden apple, pear, lemon zest, spice, floral and wet stone flavors.
