Whole bunch, cold soaked for about 5 days until wild yeast fermentation. Gently pigeaged on top/carbonic maceration below. 12 days on skins and stalks. Basket pressed to seasoned French barriques for 3 months.

"A puzzling and compelling wine in the glass - a dark, brooding core with almost translucent edges. Pepper, dried herbs and cured meats hover above spiced black plums. Fragrant and agile. There's haunting character to this. Ripeness is there, along with subtle use of oak, and an easy glide of fruit that shows true understanding of the variety. Drink 2020–2026"
