Wild whole bunch fermentation with juice all vintage ( A continuous ferment kept alive throughout the entire vintage by adding a bucket or so of whole bunches from each batch harvested ). Infused with a bouquet garni of homegrown botanicals. Basket pressed to 2 seasoned French barriques.
